Christmas Recipe | Glazed Fig Ham



  • 8kg cooked leg of ham
  • Whole cloves
  • Fig jam
  • 1/4 cup honey
  • 1 tablespoon dijon mustard


  1. Preheat oven to 180°C (160°C if fan-forced). To prepare, slice through ham rind 8cm from shank then run your finger beneath the rind, to separate from fat. Peel back, skimming your thumb under the rind and remove. Using a small knife, cut fat crossways at 3cm to form a diamond pattern, being careful not to cut the fat too deeply. Once scored, decorate with whole cloves at each corner of the diamond. Wrap the end of the shank in foil.
  2. Place honey, mustard and jam in a small pan over medium to high heat. Then cook and stir for approximately 5 minutes or until jam and honey has melted.
  3. Place the prepared ham on a wire roasting pan. Add boiling water into the pan until it reaches 2cm from the pan rim. Then, brush the ham with 1/4 fig mixture and bake. Continue to coat the ham with the remaining fig mixture every 20 minutes, for 1 hour and a half or until ham is golden. Lastly, remove foil from shank and serve.
